Slice sweet potatoes in half and soak in water for 30 minutes (to remove excess starch). Using a mandolin, slice the potatoes into thin slices. Heat palm shortening or ghee or coconut oil in a fry pan, and add sweet potato and cook. Towards the end of cooking time, add salt to taste and add fresh chopped sage. Drizzle with olive oil at the end.
