1/2 c unsweetened butter (or 1/4c coconut oil & 1/4 c butter)
1/2 cup evaporated cane juice (sucanat sugar)
1 1/2 spelt or other flour (sifted with baking powder)
1 Tbsp baking powder
3/4 cup jarred sour cherries, drained
Cream butter, add sugar & beat. add one egg and beat; add 2nd egg and beat. Sift flour & baking soda onto batter, stir and then beat. Put into cheesecake pan. Press sour cherries into the batter.
Bake at 350 for 30 to 40 minutes
