- 1 cup pitted dates
- 1 cup almonds, preferrably soaked ahead of time for better digestibility
- 2 Tbsp coconut oil
- handful of whatever else you want to put in – dried cranberries, raisins, apricots, other nuts, sesame seeds, tahini, (w h a t e v e r you have on hand)
- pinch of coarse celtic sea salt (always!)
- dash cinnamon, nutmeg, be creative
Use your food processor, and add ingredients in the order they are listed, basically. Well, maybe nuts first, then dates, coconut oil, etc. There seems to be no wrong way. These are good every time. Taste it – if it’s not good – they aren’t ready yet. Add a little more of something. The dates make them sweet. Ooh – I just thought of using figs. I have also tried prunes. Delish! Have fun!
Roll into balls, or press into the bottom of a small baking dish, chill and then cut into squares. Watch how quickly they disappear!
