Salmon Patties

Taken from Grain Free Meal Plans:

This fast meal is nutrient dense, loved by children, and takes less time to make than boxed macaroni and cheese!

  • (2) 6 ounce cans wild caught salmon
  • 2 eggs
  • 1/4 cup shredded coconut to hold together
  • 1/4 cup coconut oil to fry

Combine the salmon, eggs and shredded coconut in a bowl.  Form into patties with your hands, packing firmly.

Preheat oil to medium-high heat.  Fry in coconut oil.  Flip once browned, about 5 minutes on each side.
