Herbed Horseradish Sauce

Great on cooked buckwheat, steamed greens, and more.  Makes about 2 cups and will keep in the frig for 1-2 weeks.

Blend in blender:

  • 1/3 cup prepared horseradish (like Gold’s brand)
  • 1/4 cup apple cider vinegar

Then add and blend until smooth:

  • 3 scallions (optional)
  • 2 cloves garlic  chopped
  • 1/3 cup cottage cheese or quark or plain yogurt
  • 1/3 cup mayonnaise
  • ½ cup olive oil
  • 1 Tbsp prepared mustard
  • 2 Tbsp dried parsley or handful of fresh chopped parsley
  • 1 Tbsp dried dill or small handful of fresh dill
  • salt
  • pepper
  • 2 Tbsp mirin (rice cooking wine, adds a touch of sweetness)
